After School Snack: Rainbow Fruit Crackers

Being “snack week” over at MOMables has turned me into a snack-obsessed person.  I am not talking about packaged snacks; but a healthier version I can serve to my kids and the neighboring kids after school.  On any given afternoon, you can find up to 9 kids in my back yard or in our playroom.  Therefore,  any snack I choose to make needs to be quick, easy to make and appealing to the masses.

Today I took a ride to the Dr to check up on baby#3, so I stopped at Whole Foods for lunch and gathered the supplies to make these.  I got the original idea from Kraft foods but if you know me… I am a whole-wheat, wholesome food, fresh food kind of person.

The kid report:  5 kids here and these “rainbow” crackers were a HUGE hit!

Ingredients:

  • Whole-wheat round crackers
  • Whole-wheat assorted crackers
  • Peanut butter/almond butter/non-nut butter
  • Whipped cream cheese
  • Assorted fruit: kiwi, banana, strawberries, apples & pears (whatever you have handy really)

Directions:

  1. Wash & slice fruit.
  2. Assemble crackers by spreading peanut butter and cream cheese.
  3. Place fruit on top.
  4. Serve & Enjoy!

Those look great! Lucy’s not quite old enough for them yet but Karen and I will try them out for ourselves!

I like moon pies with rice cakes, cream cheese and fresh fruit. Yum!!
